I am now lucky enough to have Mondays off, so I’m hoping to share whatever it is I spend my afternoons cooking/baking with you, although I can’t always promise I’ll spend my day off doing so.
We still have alot of apples around the house, so it was time to make a quick dessert. This recipe is easy because it really only takes two apples and they don’t have to be peeled. Be warned however that it does take a lot of cinnamon and veggie oil. Here’s the recipe that I found on the internet god-knows-where a couple of years ago:
HIGH COUNTRY APPLE CAKE
1-3/4 cups sugar
3 eggs
1 cup oil
2 cups flour
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking powder
1 tablespoon cinnamon
2 cups unpeeled, cubed apples (Honestly, it’s only about two apples)
1/2 cup pecans, chopped (optional) I don’t do nuts.
Measure all ingredients, except apples and pecans, into large bowl. Beat together thoroughly with spoon. Fold in apples and pecans. Bake in greased and floured 9″ x 13″ pan at 350 degrees for 45 to 50 minutes. Cool and remove from pan. Serves 12.
